Old Florida Fish House first to import entire champion Wagyu cow
WALTON COUNTY, Fla. – Dec. 20, 2022 – Old Florida Fish House is the first restaurant in the U.S. to import a whole A5 BMS-12 champion Wagyu cow from Japan. The trophy and certification were presented December 13 to restaurant owners Keith and Tammie O'Leary by the importer, True World Foods, at the Santa Rosa Beach, Fla. restaurant. After the ceremony, Executive Sushi Chef D.J. McCracken prepared a chef’s table tasting and explanation of the Wagyu cuts.
Wagyu is considered the highest quality of beef in the world, with A5 as the top rating, according to a statement from O'Leary. Additionally, BMS-12 the highest rating on the beef marbling scale.
O'Leary says the importation of this A5 cow is an indicator of the restaurant's quality initiatives, not just from beef, but also in sourcing the highest quality seafood locally and from around the world. At the invitation of a Japanese trade ministry, the restaurant owners and chefs will travel to Japan this Spring to tour wagyu farms and processing facilities throughout the country.
